I was lounging around in my hammock chair today, looking through a summer cookbook, when I came across this old favorite. I posted it a couple years ago, but decided to post again because it is so yummy and it is zucchini season!
4 c. zucchini, thinly sliced
2 eggs, beaten
1 c. chopped onion
2 c. (8 oz) mozzarella cheese, shredded
1/4 to 1/2 cup butter
8 oz. tube of crescent rolls( can use reduced fat)
2 tsp. mustard
1/3 c. parsley, chopped
1/2 t. salt
1/2 tsp. pepper
1/4 t. oregano leaves
Cook and stir zucchini and onion in melted butter for 10 minutes. Stir in parsley, salt, pepper, and oregano leaves. Combine beaten eggs and cheese; add to zucchini mixture. Separate crescent rolls into triangles. Place in an ungreased 10″ pie pan, press over bottom and up sides to form crust. Spread crust with mustard. Pour vegetable mixture into crust. Bake in preheated in 375 degrees for 18 to 20 minutes or until center is set. Cover crust with foil last 10 minutes of baking. Let stand 15 minutes before serving.
The last time, I had forgotten to cover the crust, so it got very brown. I said that the next time, I would cover it, so this is the new pie picture. I remembered to cover it, but not until it was almost too late!
When you feel uptight or upset, and know that you just need to relax, a very simple and quick way to do this is to sip some green tea. It is an herbal tea, so there is no caffeine to get you revved up. It contains L-Thanine, which is a chemical that actually helps to relieve anger.
Take your nice cup of tea to your favorite spot to sit, possibly a knotted hammock chair. Sit carefully, you don’t need a burn, then sip slowly, just feeling yourself calming down and relaxing immediately. Tell yourself you will at least sit here until your tea cup is empty, and longer, if possible. Now, give yourself a pat for taking care of you!
My family has five hammock chairs around our big maple tree. We sit in there, a bit hidden, under the shelter of the branches. We love our special family time spent here. It’s shady and cool in the heat of the summer too!
Yesterday morning I saw that one of the branches was laying on the ground. Did it even storm? No! It must just be too heavy from the rain, and the long branch couldn’t hold itself up any more. Not a complete tragedy, of course, as we still have privacy in the backyard. But we will miss that full branch! Thank God for our hammock chair hideout!
Here again to talk about relaxing! Of course, I will start out by saying that an obvious way to relax is to plop down in a hammock and take a nap. But there are also hammock chairs, which are just as cozy, and work better in certain situations.
For example, you live in an apartment, have no yard, but you do have a balcony, and love being outside. Hang a hammock chair out there! You will love yourself for it!
Actually, he was just so happy to be sitting near anyone in the family. He is a little hard to see, but he is sitting in this hammock chair too!
Any one of them would be thrilled to just a fly a kite! I was actually able to catch a short swing in a swinging hammock chair on the porch of the kite loft while watching a few kite competitions!
After the tragic events of the Boston Marathon yesterday, it is hard not to feel fear and loss of hope in humanity. But let’s rejoice in the bravery of the responders and everyone who jumped in to help those injured. Some runners ran to the hospital to donate blood. Bostonians are offering their homes to strangers that need a place to stay. Love is very much alive in this country. Let us remember that a few dirty drops of water do not spoil a whole ocean.
Let us send them prayers and positive hopes for recovery. My thoughts and prayers have been constantly with our brothers and sisters involved in this tragedy. I have spent the last hour in my hammock chair in prayer. Now I will go for a run to honor all of these people.
I’m heading to the beach! I love the weekend I spend with my Mom in Cape May, NJ. It’s special time that I treasure and I want to do this as long as we can. It’s nice to just spend time chatting and catching up.
We are staying at an old historic hotel with rocking chairs on the porch. I love rocking and looking at the ocean, while sipping a glass of wine. The only thing better would be possibly hanging out in hammock swings, but I will just be happy for what we have.
Every day, and I know I complained before, and so did another blogger, but it is windy again! My hammock chair is flying around like a twirling top!
I am ready for the wind to go away because “windy March” is over! I guess it will be April showers soon, that bring May flowers!
Okay, yesterday was a very nice day. I enjoyed my family and the time we shared together. I also enjoyed the food! Yum! However, the food has settled and now I am just feeling like I have a food hangover!
In fact, I’m afraid that my knotted hammock chair is going to stretch to the ground today! I absolutely have to get out and get some exercise later today. It should be a good day to try to get to get rid of this sluggish feeling, and I am definitely going to be eating some leafy greens today!
